Stuffed Green Peppers

Tonight for dinner we had stuffed green peppers- well Jack, Jan and I did. Thomas doesn't like green peppers so he just had the stuff. They were very easy to make and oh so good! Thanks Jan for the great idea!!

Stuffed Green Peppers
(recipe from cooks.com)

6-8 Large Green Peppers
1 lb Ground Beef (we used ground turkey)
1 Medium Onion
1 Bag Shredded Mozzarella
2 Medium Cans Tomato Sauce
2 Cups Cooked Rice

Directions:
Wash peppers, cut off tops and scoop out insides carefully without poking through the pepper. Set aside.

Cook rice as usual. Brown the ground beef or turkey and onion, drain grease and add tomato sauce (leaving some to cover bottom of cooking dish)

Add cooked rice to meat mixture and stir together well. Place some mozzarella in bottom of peppers and then spoon in meat mixture, packing down carefully until filled.
Sprinkle mozzarella on top.

Bake at 375 degrees in a covered dish with foil over top until peppers are slightly soft. About an 1 hour to 1 1/2 hours.

You get to see what others are currently reading, what they have read and their review, what they want to read, etc. And you can make your own profile and keep track of the books you have read and those you want to read. Pretty freakin cool I'd say! :)

Looks good! We almost had stuffed peppers last night also but I didn't get them made. Maybe tonight.
